An unexpected invitation and discoveries.

A few weeks ago I got an email asking if I was interested in trying out the reCAP Mason Jar lids by Mason Jars Company.
Of course I was! I love Mason jars, and use them not only for canning and preserving, but also for crafts projects, so I was very curious what “recap” was all about. To me this was a brand new product, I had not yet heard about, so I did some research, and found some very interesting things.
Below are the two kinds I received to try: The Mason flip cap and the pour cap.
When we were little, the kids in my neighborhood would go fishing for toad pols, or try to catch butterflies and watch caterpillars hatch into moths. We kept them in glass jars covered with plastic, a few holes for air, held in place with a rubber band. Glow -in-the-dark was not invented yet as far as I know!
However I digress.
It seems like forever that I have been using these white lids for my Mason jars.
The rubber seal helps keep the freshness in the jars, and when you pour the juice, there is no mess!
Two of our families favorite recipes:
Grandma’s pickled beets
1 to 1 ½ cups sugar
1 tbsp. whole cloves
1 tbsp. whole mixed pickling spices
1 tbsp. mustard seed
Tie the spices in a cheesecloth bag and hang into the vinegar mixture.
Bring to a boil and boil for 5 minutes.
Pack cut up pre-cooked beets into hot and sterile Mason jars.
Pour the boiling vinegar mixture over the beets and seal hot.
Grandma’s chili sauce
15 ripe tomatoes
15 green tomatoes
8 large onions
3 lbs (6 cups) sugar
1 quart (4 cups) vinegar
2 tbsp. cornstarch
2 tbsp. salt
1 tbsp. ginger
1 tbsp. Cinnamon
2 tbsp. Ground mustard
1 tbsp. ground cloves
1 tsp. red pepper
Chop all vegetables fine. Add the liquids and spices, keeping back the cornstarch and a little bit of the vinegar. Cook , add the cornstarch dissolved in the vinegar, cook until thick. Seal hot in sterile Mason jars.
Isn’t he the cutest? Dutch people love their chocolate, they like their chocolate sprinkles on their cakes and on their bread! Dutch children will have a chocolate covered sandwich for breakfast or lunch. Personally their is nothing I like more!
